Vellutata di Porri - Leek velvety cream

INGREDIENTI
-2 Porri
-1 Cipolla
-4 patate medio/piccole
-600 ml di acqua
-1 misurino di dado
-Sale q.b

- 1 onion
-4 medium/small potatoes
-600 ml of water
-1 vegetable stock cube
- salt-to taste

Soft & smooth. Take your leeks and cut the two ends (roots and stem-end) and pull-off external sheet and dice. Peel onion and potatoes and cut in small pieces. Take a pan and let fry slightly oil, onion and a little coarse salt, then add leeks and potatoes Sauté for a minute and add vegetable stock (hot water with the addition of vegetable stock cube). Cook for 30/40 minutes (when the ingredients begin to break down – and being tenderly, turn off the stove). Now blend everything and pour your velvety cream on the plate. With one leaf pulled off from the leeks, make thin strips and fry for 3 minutes in hot oil. You’ll have a nice decoration. The palate is satisfied. (translation by LittleFrog)
